Cabinets Heated Proofing and Holding
Holding cabinets hold food warm at safe temperatures until ready to serve. Most holding cabinets maintain temperatures to 185 degrees Fahrenheit. Proofing cabinets provide a warm, humid environment to allow dough to rise prior to baking for breads, pastries, donuts, croissants, etc. Dough proofers generally allow heat to be maintained between 70 - 115 degrees Fahrenheit. Proofing and Holding cabinets are flexible and can provide a wide range of heat with moisture to serve both purposes.
