Charbroilers, sometimes simply referred to a broilers, grill or broil over open grates and are fundamental in most restaurants. They cook juicy, tender meats with flavors of a BBQ. Charbroilers are offered gas (natural or liquid propane) or electric, and you can choose from infrared, lava rock or radiant heat sources. In a radiant heat source, the burner is under a metal radiant which radiates concentrated heat towards the food. Lava rock charbroilers use bed of ceramic lava stones over the burners. The stones radiate a more diffuse heat towards the food. The stones also hold drippings from the meat which create the smoke and aroma of an outdoor BBQ.
